Cinnamon (Cinnamomum) is the inner bark of the Cinnamon tree. The bark is removed by cutting and left to dry for 4-5 days in the shade, until it curls and acquires a brown color that turns to reddish brown. Its origin comes from the tropical regions of Asia, especially Sri Lanka.
Cinnamon is also marketed in powder form, and it is used mainly in bakery products.
